En smakfull pasta carbonara för den som vill njuta massor av ost i pastan!<br />
Jag själv älskar ost och skulle nog kunna ha det i allt hihi men så tokig är inte<br />
änns jag "ler".<br />
Men carbonara är ju en enkel och snabbgjord pasta att göra i ordning om<br />
man har bråttom till olika aktiviteter eller innan jobbet.<br />

Sen finhackar du löken. Fräs den mjuk i olivolja<br />
i en stekpanna.<br />
<br />
Riv osten och blanda samman färskost, grädde, ost och ägg i en skål.<br />

Blanda alltsammans kvickt i en gryta så allt blir varmt.<br />

<b>Pajdeg:</b><br />
150 g smör<br />
3 dl vetemjöl, 180 g<br />
2 msk iskallt vatten<br />

<b>Fyllning:</b><br />
400 g nötfärs<br />
rapsolja till stekning<br />
1 gul lök<br />
2 vitlöksklyftor<br />
1 morot<br />
1 dl rött vin<br />
2 dl hela tomater<br />
1 dl chilisås<br />
1 msk torkad oregano<br />
1 ägg<br />
1 dl creme fraiche<br />
ca 10 svarta oliver<br />
1 kula mozzarella<br />
salt och peppar<br />
<br />
<b>Crudite:</b><br />
1 liten fänkål<br />
2 msk olivolja<br />
½ tsk salt<br />
<br />
<b>Gör så här:</b><br />
Hacka smör och mjöl till en grynig massa. Tillsätt vattnet och arbeta snabbt ihop till en deg, går utmärkt i matberedare. Kavla ut degen till en ca 4 mm tunn platta och klä en smord pajform ca 23 cmdiametern, med degen. Låt vila i frysen i minst 15 minuter.<br />
<br />
Fräs färsen i olja i en stekpanna och mosa den smulig med en gaffel. Tillsätt hackad lök, vitlök och morot skuren i små tärningar. Häll på vin, buljong, tomater, chilisås och oregano. Låt småputtra till nästan all vätska kokat in. Låt svalna. Blanda sedan ner ägg och creme fraiche.<br />
Ta formen ur frysen, ställ direkt i 225 grader varm ugn och förgrädda i ca 5 minuter. Ta ut pajen och sänk ugnsvärmen till 175 grader.<br />
Fördela färsen i i det gräddade pajskalet. tryck ner oliver och rör försiktigt ner riven mozzarella i pajen. Grädda 1 175 grader i ca 35 minuter.<br />
<br />
skiva fänkålen supertunt med en mandolin eller vas kniv. Lägg den i en bunke tillsammans med olivoljaoch lite salt. Blanda väl några gånger under tiden pajen står i ugnen.<br />
Servera med cruditen. Smaklig spis!<br />

Parmesanost är ju original osten i pasta carbonara men som sagt vem har sagt att det måste vara just den ta den ost som faller dig och din familj bäst i smaken finns inget som heter fel när man lagar mat. </span></span></div>

Har fått lite fnatt på att panera de varse kött. Dagarna innan ju var vi Berlin och njut av julatmosfären bland julmarknader, drack gluhwein tyskarnas typ av glögg. Älskar den är mycket godare än vår glögg är inte så söt som vår glögg.<br />

Hade ett par helt fantastiska dagar där och vi åt en god wierschnitzel sista dagen innan vi skulle ta flyget hem till Sverige igen och förbereda inför julafton denna schnitzel var det då inget fel på smaskade i oss så vi höll oss till vi kom hem.<br />

<b>GÖR SÅ HÄR : </b><br />
Gör först smöret och låt det stå i kylskåpet tills det är dags för servering.<br />

Skiva köttet 1 cm tjockt. Banka ut det till ca 4-5 mm. Doppa i mjöl (blanda mjölet med salt & vitpeppar) och se till att hela täcks ordentligt. Skaka av och doppa i de uppvispade äggen. Låt rinna av och doppa sist i ströbröd. Lägg på en skärbräda och låt paneringen torka till lite innan du steker. Stek i rikligt med smör på medelvärme. Håll schnitzlarna varma i ugnen i 100 grader ca 10- 15 minuter och lägg gärna ett bakplåtspapper över. Servera med citronklyfta. stekt potatis, varma cocktailtomater, persilja och aromsmör.<br />

2,5 dl mjölk<br />
250 g Kesella 10% (Vanilj)<br />

<b>1.</b> Smält smöret och häll i mjölken och låt svalna till 37 grader. <br />
Smula ner jästen och rör om tills den löst sig med degvätskan. Tillsätt Kesellan.<br />

<b>2.</b> Blanda de i de övriga ingredienserna (ta inte allt mjöl på en gång) och tillsätt<br />
i degvätskan.<br />

<b>3.</b> Arbeta till en smidig deg.<br />

<b>4.</b> Låt jäsa under bakduk i 30minuter.<br />

<b>5.</b> Dela degen i två och kavala ut. Blanda smör, vaniljsocker, kokos och choklad <br />
och bred ut på degen. Rulla ihop och skär i ca 1,5-2cm tjocka skivor. <br />
Lägg i bullformar. Låt jäsa ytterligare i 30minuter.<br />
